Lightening up with this blog today. As many of you know, I provide equine therapy. I love doing it. I love to see how the healing power of horses. They are such wonderful animals. Well, today is my main therapy horse’s 24th birthday! Yes, you read that correctly. My little, gray mare is 24 today and going strong. She’s a favorite of the kids.
In honor of her birthday, I made her a birthday cake and had a little celebration. I’m honestly not sure what I would do without this wonderful little mare. She’s a spitfire when she wants to be–a sassy little thing. But, she’s also gentle and kind. She’s a one of a kind horse (yes, I’m biased, but ask anyone…they will tell you she’s something special).
So, enough of my jabbering on. Let’s get to the recipe. 🙂
Horse Birthday Cake
5-6 carrots grated
1/2 cup molasses
2 cups rolled oats
2 cups flour
Instructions:
Preheat oven to 350. Line a baking pan with parchment paper or a silicone mat.
Grate carrots and place in a separate bowl
Combine oats and flour. Add to carrots and mix well.
Add molasses (The dough will be really sticky. If it seems too thick, slowly add a little water.)
Form into your desired shape on a baking sheet
Bake for 20 minutes, or until brown
Remove from oven and cool. You can add sliced apples, carrots, or horse treats to the top if you choose.
